Tony’s Kitchen: Caramelised Red Onion Chutney

Taking a break from conjuring up a batch of delicious cookies, and preparing one of his famous homemade loaves, Tony’s has shared some of his recipies with us. This month’s recipe and all future recipes can be found on our blog. Bon appétit!

 

Caramelised Red Onion Chutney

Ingredients:

6 large red onions, halved and medium sliced
3 cups of sugar (granulated is fine)
3 cups of balsamic vinegar and red wine vinegar (half and half mixture)
2 tea spoons of mustard seeds
Salt and pepper
 
Method:

Caramelise the onions in small batches, then place into a large heavy bottomed pan. Add all the ingredients together and bring to a boil. Simmer until it reaches its setting point.* Pot the mixture into clean warm jars and fit the lids on top. Leave to cool.

*To check the setting point: test a small amount on a chilled saucer by putting a small teaspoon worth on a place in the freezer for 1 minute and check if it wrinkles when disturbed.
